Some yummy baking

Apple chocolate cake

240 g cake flour
5ml baking soda
10 ml baking powder
20 g cocoa
Pinch of salt
210 g castor sugar
4 extra large eggs
5ml vanilla essence
250 ml oil
250 ml apple puree

Preheat the oven to 180 C
Sift the cake flour, baking soda, baking powder, cocoa and salt together.
Place the castor sugar, eggs, vanilla essence and oil in a bowl and beat well.
Add the apple puree and mix.  Add the dry ingredients and mix.  Spoon into the prepared tins and bake for 40 – 45 minutes or until the cake tests done.
Cool on wire racks.  Sandwich together with a layer of apricot jam.
Dust with a little icing sugar just before serving.

Hannah had a meet the teachers and other students and their families the other day at school so she asked if we could make a apple chocolate cake for her contribution.  Thought why not as it was an interesting recipe and I like trying new baking.  It was super yummy.
